motivation monday : healthy eating


my favorite little thing today?
my little girl saying:
'mommy, you make really good healthy food'
those little words made me so happy!
i do my best to eat healthy, and to feed my family good food.
and this week,
i am looking forward to sharing a few little things about healthy eating with you!

what is your favorite little healthy snack?

mine is red peppers with hummus...yummmm

  3. Flax meal cookies!
    Judy's Famous Flax Meal Cookies
    *These cookies will not sabotage your weight loss efforts...they will actually help!


    Ingredients:
    2 Sticks & 5 Tablespoons of Butter (room temperature)
    1¼ Cups of Splenda Baking Blend
    ¾ Cup of Splenda Brown Sugar
    1 Cup of Ground Flax Seeds or Flax Meal
    3 Large Eggs
    1½ Teaspoon Vanilla
    3½ Cups of Self Rising Flour
    3 Cups of Oatmeal
    2½ Cups Ghirardelli Bittersweet Chocolate Chips

    Directions:
    *Follow the directions in order for the cookies to turn out right. I use a hand held mixer to blend after adding each ingredient.
    1.Cream butter and Splenda Sugars together
    2.Add Flax Meal to the batter and blend
    3.Add Eggs and blend
    4.Add Vanilla and blend
    5.Add Flour one cup at a time and blend
    6.Add Oatmeal one cup at a time and blend
    7.Add Chocolate Chips and stir them in with a wooden spoon.

    Form dough into logs and wrap each log with wax paper. Place in refrigerator and chill. (Keeps in fridge for weeks.) Preheat oven to 350 degrees. Slice into ¼ inch medallions. Place on baking sheet leaving about 2 inches between cookies. Bake 14 minutes.
